TASTING-GC® Development and Research on Apple Aroma Components Wins the Japan Soft Drink Association Award!

Soda Aromatic Co., Ltd. has been honored with the prestigious "Japan Soft Drink Association Award" for developing a novel method, "TASTING-GC®," which allows for aroma evaluation as if tasting the product, and for its research on key aroma components in apples.

The TASTING-GC® technology is based on the existing method known as " GC-Olfactometry (GC-O)," which analyzes aroma compounds. This patented technique (JP Patent No. 6788204) enables a deeper understanding of the role aroma plays when consuming food or beverages. It also makes it easier to study the interaction between taste and aroma.
In this research, the method was applied to the aroma of seasonal apples, and through the screening of useful components, it was discovered that 2,4,6-Trichloroanisole (TCA), typically recognized as an off-flavor compound in the food industry, plays a significant role in the aroma profile.
