Humans perceive most odors as complex mixtures influenced by interactions between odorant molecules. This study investigated how 3-octen-2-one, known to modulate vanilla aroma, affects human olfactory receptors using a sensor with all 388 receptor types. The results showed that vanilla flavor with 3-octen-2-one enhanced the response of the OR1D2 receptor compared with vanilla aroma and completely suppressed the response of the OR5K1 receptor.
